Directions
Who doesn’t love “crespelle”?
Easy to prepare, they are good either in sweet or savoury variation.
Sometimes I prepare them without butter and milk so that they are lighter, but this is the original version.

Prepare the crespelleIn a bowl put 2 eggs, milk, salt and pepper and then butter at a room temperature. Add the flour stiring with a whisk so that to avoid forming lumps. |

Cook crespellePut a pan of about 20 cm. on the fire and with the help of a little ladle take the liquid and pour it into the pan. Let it cook for about one minute at a medium high temperature than turn it and let it cook for some moments more. Put the cooked crespella on a plate. Continue since you have finish the liquid. You should make approximatly 16/18 crespelle |

Prepare the fillingIn a mixer machine put ricotta cheese, egg, and olive oil add salt and pepper and mix togther at a medium speed. In a pan put a table spoon of olive oil and let the garlic brown. Then add the mushrooms washed and chopped. When they are cooked add to the mixture and mix all the ingredients together. |

Fill the crespelleLay the crespelle on a cutting board and put approximatly a spoon of mixture on them. Roll them up and then place them on a oven tray that you have previously greased with oil. Sprinkle the crespelle with parmesan cheese and put into the oven at 200 °C for about 20 m inutes. |
